Jackfruit and broken wheat paayasam

When jackfruit meets broken wheat in a paayasam, it is what’s called marriage made in heaven!

Ingredients:

  • Grated coconut (for coconut milk)
  • Broken wheat
  • Palm sugar or naati bella
  • Jackfruit
  • Ghee
  • Cashew and raisins

Method:

  1. Grind 2 whole coconut shavings to extract coconut milk..
  2. The very first extract usually has very little water and is thick After the first extract, grind it with some more water to get a thinner second extract.
  3. In a pressure cooker, add 4 spoons of ghee and gently fry the broken wheat to a fragrant mixture on low heat.
  4. Good 5 minutes and the second (thinner) extract with some water should be good to cook the broken wheat cook it for upto 4 whistles and let it cool once it has cooled, add naati bella or palm sugar (brown) to it and put it back on fire stir and cook it till it has a slightly thick consistency and the palm sugar has all dissolved..
  5. Then add the jackfruit to it.. We usually prefer small pieces..
  6. About a cup full for 2 cups of broken wheat..
  7. Once the jackfruit is slightly cooked the first (thick) extract of coconut milk goes in and cook it on low heat till you see a rim of ghee on the side of the vessel.
  8. Once you see it, it’s done.
  9. Garnish it with a handful of cashew nuts and raisins fried to golden in ghee.. We avoid cardamom because the jackfruit has a strong taste already..
