Ingredients:
- Sprouted green gram – 200 gms
- Boiled baby corn (chopped) – 5 tbsp
- Mustard seeds – ½ tsp
- Red chilly – 1 no
- Curry leaves – 5 nos
- Ginger & green chilly paste – 1 tsp
- Chopped raw mango – 3 tbsp
- Raisins – 1 tbsp
- Chopped dates – 1 tbsp
- Pomegranate – 2 tbsp
- Roasted cashewnuts – 1 tbsp
- Ghee – 2 tsp
- Lemon juice – from half a lemon
- Coriander leaves (fine chopped) – 1 tsp
Method:
1. Boil sprouted moong dhal & baby corn with salt. Drain the excess water and set aside.
2. Heat ghee in a wok. When hot, temper with mustard seeds, red chilly, curry leaves, ginger & green chilly paste. Sauté
3. Add the chopped raw mangoes, dates, raisins and pomegranate and sauté.
4. Check for salt.
5. Add lemon juice and switch off stove.
6. Garnish with roasted cashew nuts and fresh coriander leaves.
7. Serve warm.
