Nippattu | Karnataka style thattai

Ingredients:

·      Rice flour – 1 cup
·      Fried gram / Pottu kadalai – ¼ cup
·      Maida – ¼ cup (roasted)
·      Roasted peanuts – ¼ cup
·      Cumin seeds – 1 tsp
·      Rava/ Sooji – 2 tbsp
·      Sesame seeds – 2 tsp
·      Red chillies – 4 nos (roasted)
·      Curry leaves – 1 sprig (roasted)
·      Asafoetida – 1 tsp   
·      Oil
·      Salt

Method:

1.     Dry roast the red chillies and curry leaves. Set aside to cool.

2.     Dry roast maida. Ensure the colour doesn’t change.

3.     In a mixie, add the curry leaves and red chillies and make a coarse powder.

4.     To this mixture, add the fried lentils and grind to a coarse powder.

5.     Now add the roasted peanuts to this and grind again.

6.     Remove this powder and pour into a bowl.

7.     Add the rice flour, rava, sesame seeds, salt and few teaspoons of oil.

8.     Mix well.

9.     Add water and make a firm dough.

10. Spread this dough using a rolling pin and cut using a round cookie cutter as thick discs

11. Fry these discs in hot oil till well done.

12. Drain on a kitchen towel and set aside to cool before storing in an airtight jar.
