- Raw Mango – 1 cup cut in cubes
- Red apple – 1 cup cut in cubes
- Boiled sprouts – ½ cup
- Salt – 1 tsp
Dressing:
- Red pepper – 2 nos (de seeded and cut in chunks)
- Red chillies – 3 nos
- Roasted cumin – ½ tsp
- Garlic – 4 cloves
Directions:
- Mix raw mango, red apple and boiled sprouts and set aside
- Pour olive oil in a baking tin
- Add the red pepper, garlic and red chilles and oven roast 240 Deg F for 20 mins until th red peppers turn slightly black in the edges.
- Remove from oven, cool and blend into a paste adding olive oil
- Add the dressing to the mélange of vegetables
- Check for salt
- Chill the salad and serve the salad over salt biscuits/ cream / cheese crackers
